I’m a grilling novice but know that it’s a worthwhile technique for the flavor and char. This Rendezvous-marinated chicken is diced for ease and grilled to perfection. It’s great in tacos but, honestly, it’d be great on anything!
2 chicken breasts, diced
1/2 cup Rendezvous sauce
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon Rendezvous seasoning
1/2 onion, diced and caramelized
Olive oil
Corn tortillas
Shredded lettuce
Jalapeño, to garnish
Cilantro, to garnish
Combine BBQ sauce, Dijon, honey, and seasoning in a dish. Add half of the caramelized onion and chicken. Toss to coat. Marinate in refrigerator overnight or up to 8 hours. Just before adding to the grill pan in a preheated grill, toss the marinated chicken in a drizzle of oil to prevent sticking.
Grill chicken, tossing every few minutes, until golden and the internal temperature reads 165F. During the last few minutes, add corn tortillas to the grill to lightly char. Top tortillas with lettuce, chicken, remaining onion, cilantro, jalapeño, and an extra sprinkle of Rendezvous seasoning. Add extra toppings if you’d like!
