Peaches and Granola

Cara-35 No produce completes a meal more perfectly than late summer peaches. Extra juicy with a punch of tartness, these sweet discs of color are my go-to plated produce for breakfast, brunch, lunch, or dessert. For an added textural component, I sprinkle the fruit with sliced almonds and a mild, sweet granola. Admittedly I do not make my own (though I should), because I'm hooked on Whole Foods' honey vanilla granola in the bulk section.

Despite the low level of difficulty with this minimalistic side dish, your guests will feel like you accomplished a culinary, creative feat upon spooning the peaches on their plates!

Makes 6 servings

2 peaches, pitted and sliced 1 inch thick 1 tablespoon sliced almonds 2 tablespoons granola 1 tablespoon créme fraiche, optional

1. Arrange peach slices on a serving tray. Sprinkle almonds and granola atop peaches. Drizzle with créme fraiche, if desired.

Pardon the Pamplemousse

Processed with VSCOcam with f2 preset Pardon the frequency, but my affinity for pink citrus has expanded beyond my daily Pamplemousse Le Croix ritual at the office. I perused through my iPhone photo gallery the other evening, only to notice that grapefruit has appeared in more than a few snapshots from the past week.

Porcellino's bruléed grapefruit (below) is my favorite weekend bite--imagine a cold grapefruit half with a thick molasses crust torched to crispy perfection. A healthy créme brulée, if you will? Oh, and I highly recommend the yogurt and granola as a pairing. It's the best taste and presentation of yogurt & granola that Memphis, Tennessee has ever seen.

The paloma at Hog & Hominy (pictured below) temporarily subdued the 110-degree heat index earlier this week. I swooned over the refreshing square ice cubes and center-dunked slice of grapefruit. Utterly smooth and refreshing, the tequila cocktail pushed me to post on social media that every productive Monday should end with a paloma.

My recipe below is a summer Caramelized version of a pamplemousse cocktail. Roll out the bar cart and shake away this upcoming weekend! This pamplemousse fizz is ideal for kicking back on the front patio.

 Makes 1 serving

Grapefruit wedge Margarita salt Ice cubes 1/4 cup fresh grapefruit juice 3 tablespoons tequila 1 jalapeño pepper slice 1/2 lime Pamplemousse Le Croix

1. Rub the rim of a glass with a grapefruit wedge; dip in margarita salt to coat.

2. Fill glass with ice cubes. Fill a cocktail shaker half full with ice. Add grapefruit juice, tequila, lime juice, and 1 jalapeño pepper slice. Cover with lid, and shake vigorously until thoroughly chilled.

3. Strain into prepared glass. Top with Le Croix. Garnish, if desired.

Grilled Peaches with Honey and Mint

IMG_6905 My weekly trip to the Memphis Farmers Market has reached a new level -- the peach farmer (first booth on your right from the main entrance) recognizes my routine visit. I hate to waste an entire basket of ripe peaches, so he lets me take 2 for a dollar, or 4 for $2. It's a super sweet gesture for my favorite fruit of the season.

Grilled fruit is a go-to side dish or salad base for my summer meals, particularly because the natural caramelization is so irresistible! I add a few drops of Nature Nate's before throwing them on the heat; and 5 minutes later, they're ready to go.

For a richer application, my friend Justin Fox Burks of the Chubby Vegetarian throws his grilled peaches in a dutch baby with fresh, creamy burrata cheese. The heavenly fruit and cheese combination could serve as a light salad or more savory dessert option.

Makes 2 servings

2 peaches, pitted and quartered 2 sprigs fresh mint 1 tablespoon Nature Nate's honey 1/2 teaspoon coarse sea salt

1. Spray nonstick spray on a grill (or grill pan) over medium heat. Brush peach slices with honey.

2. Place peaches, skin side up, on grill. Allow fruit to caramelize for 4-5 minutes until grill marks appear.

3. Immediately plate peaches. Top with torn pieces of mint, sprinkled sea salt, and a bit of extra honey if you're in need of some more sweetness.

Honey Lavender Berry Compote

IMG_4435 The produce color palette is brightening its hues each time I arrive at the grocery store -- alas, spring is finally here! A simple combination that stands alone or enhances a scoop of ice cream or slice of pound cake, this compote will sing spring on your dining room table. The pure, natural honey (I highly recommend and use Nature Nate's) brings out the natural flavors of strawberries, blueberries, or whatever fruit graces your kitchen countertop. I added a few dashes of lavender extract (from a recent Hatchery delivery) for an extra floral undertone. Spring has sprung, thanks to this sweet new honey treat!

Makes 2 cups compote

1 cup strawberries, quartered 1 cup blueberries 1 teaspoon Nature Nate's pure honey Few dashes lavender extract Zest and juice of 1/2 lemon

1. Mix all ingredients in a small bowl. Allow compote to marinate in refrigerator until chilled, at least one hour. Serve individually, or sprinkle over a dessert.

Better than Pie Pecans

A Box of Chocolates

"Life is like a box of chocolates." Or, at least, my life is lately. IMG_3052

Tessa, an adorable second-generation chocolatier from my old stomping grounds of Austin, has an eye for style and a taste for artisanal authenticity. The recipe, the family ties, the packaging, and the hand-scripted notes collectively create a refreshing brand. Perhaps it's my public relations mouth talking, but I am so impressed with Tessa's ability to merge old tradition with a modern, fresh face. I don't even know Tessa personally, but I can align with her approach as I click through the classic Chocolaterie Tessa site and break off a bite of a salted caramel milk chocolate.

The chocolates are miraculously so tiny yet so detailed. I loved the heart flourish in my box, which I'm sure is a holiday-themed move.
