Let’s face it—it’s hard to get, let alone make healthy meals on a daily basis. We all want to do what’s right for our bodies, but, when we’re constantly on-the-go, we sometimes must settle for faster food options. After a ten-hour day at work, I find myself opting for too much sodium-filled Vietnamese takeout because of its convenience and price, even though I know I should be steering clear of the sauces and rice-based carbs on such a regular basis!

How do we establish a well-balanced diet in our busy lives?

Now, I know what you’re thinking; how could that taste good? But trust me, it’s rich and just sweet enough to substitute any late-night sugar craving. Makes 30 bites (Serving size = 3 bites)

1/2 cup applesauce
1/3 cup egg whites
1/3 cup plain Greek yogurt
1 teaspoon vanilla extract
1 cup rinsed black beans
1/3 cup avocado pulp
1/2 cup oat flour
1 teaspoon baking powder
1/2 cup dark chocolate chips
1/2 cup milk chocolate chips
1/2 cup chocolate protein powder
1/2 cup cocoa powder
1/2 cup stevia

1. Combine applesauce, egg whites, Greek yogurt, vanilla extract, black beans + avocado pulp together in a mixing bowl. Beat until well blended.

2. Mix oat flour, baking powder, chocolate chips, protein powder, cocoa powder + stevia together in separate bowl.

3. Slowly add dry ingredients to mixing bowl. Mix until well blended.

4. Spray mini muffin tins with cooking spray + fill with mixture.

5. Bake at 350 degrees for 15 minutes.
