Does anyone else over-order Girl Scout cookies out of guilt or straight-up obsession? Well, upon grabbing my frozen ice cream bowl for our new ice cream maker, I noticed a sleeve of Thin Mints on the door and found my calling for National Ice Cream Day. Whether served up with a cookie garnish or scooped between two cookies, you’re set with this recipe. No, it’s not healthy, but it’s pretty outstanding.
Makes 1 pint
1 cup milk
1 cup heavy cream
1/2 cup sugar
1/2 teaspoon vanilla extract
10 Thin Mints, chopped
10 Thin Mints, for garnish or sandwiching
1. Whisk ingredients together in a bowl, ensuring sugar is stirred in (versus sinking to the bottom).
2. Place in ice cream maker. Churn for 15-20 minutes, until firm.
3. Use a mini scooper to make sandwiches, and transfer the remaining ice cream to a freezer-safe dish.
4. Freeze sandwiches and ice cream until ready to eat!
