These bountiful brussels are such a breeze to put together and top with your favorite protein, such as a pan-seared salmon filet, grilled chicken, or flank steak. The key to this simple recipe is “flash sautéing” the greens and allowing them to rest/return back to room temperature while marinating in lemon juice. The brussels lose their toughness, soak in the citrus, and enter a new level of deliciousness. Enjoy!
Serves 4 (as a starter)
4 cups shaved brussels sprouts
2 tablespoons olive oil
Juice of 1 lemon
1/4 cup shredded parmesan cheese
Sea salt and black pepper
1. In a large bowl, toss brussels sprouts in olive oil. Heat a large skillet over medium heat.
2. Add brussels to pan, immediately tossing with tongs and continuously to stir until brussels begin to brighten in greenness. After 2 minutes max, turn off stovetop and return brussels back to mixing bowl. Squeeze lemon juice generously over brussels and toss once more. Allow to rest for at least 10 minutes (up to 30).
3. Season brussels with salt and pepper, tasting and adjusting accordingly. Toss in parmesan cheese before serving!
